Made from Scratch Hot Cocoa

So I didn't intend this post to irritate my friends and family back home in Texas where they are experiencing a record stretch of days over 100 degrees... It was, as I mentioned yesterday, unseasonably cold and rainy the other day.

When Ross and I got home from working, I immediately changed into flannel pj bottoms, a long sleeved t-shirt, and fuzzy socks.  Then I cuddled up on the couch with a soft blanket.  (You can stop throwing things at the computer and cursing me now.)

All this to say that I really wanted something sweet and warm.  Hot cocoa was just the thing!
Luckily, I had all of the ingredients to make it from scratch in the kitchen already.

This recipe is for 2 mugs of cocoa.  It seems silly to make just 1, so I suffer and have 2.  You can obviously increase the recipe as needed.

Measure 2 cups of milk.


Pour them into a pan (it's best if it's got a thick-ish bottom) and heat slowly.


While it's heating, put in a small bowl 1.5 tsp of cocoa powder.


Add 1/8 cup of sugar.


Stir them together.


Once the milk gets hot it should look like this (a bit bubbly in a foamy way, but not boiling).


Pour about a 3rd of the warm milk into the bowl with the cocoa/sugar mix.


Stir to blend.


Pour this back into the pan with the rest of the milk.


Use a whisk to fully blend and remove any lumps.


And now- the secret ingredient.  A tiny drizzle of vanilla! (You could also add a sprinkle of cinnamon)


Once it's gotten nice and hot (but never boiled!  Keep and eye out!) Pour it into a mug and enjoy!
